Vegetarian Sausage & Peppers

Ingredients
1 pkg (1lb) Morningstar brand (or equivalent) Italian sausages
1 large green pepper (sliced)
1 large onion (sliced)
1/4 cup olive oil
2 garlic cloves - grated
1/2 tsp oregano
1/2 tsp basil
salt/pepper to taste


Cook defrosted sausage in boiling water for 5 minutes. Set aside. Heat olive oil in large (Teflon) fry pan on low heat. Add grated garlic - saute 1 min. Add green peppers and onions. Raise heat to medium and saute lightly turning frequently. Pour water from sausage. Cut each sausage into 3 pieces. Add to pepper & onions. Add oregano, basil, salt & pepper. Mix well. Saute for 5 minutes or until green pepper & onions are cooked. Serves 4.


Soy Ham Casserole

Ingredients
1 can Cream of celery/mushroom soup
1 pkg. Worthington Wham slices
3 cans sliced potatoes
1 large onion sliced very thin
1 large green pepper sliced very thin
1/2 cup chopped parsley
1 tbsp butter or margarine
1/2 cup half & half or non-dairy coffee creamer
salt/pepper
Place canned soup in medium size bowl, add parsley, salt/pepper,butter/margarine, cream. Mix well - set aside. In a casserole dish arrange in layers - ham, sliced potatoes, onion, green peppers. Pour soup mixture over ham & vegatables. Cover. Microwave 10 minutes on 80... uncover and microwave 5 minutes on high. Remove from microwave. Garnish with grated cheese and/or imitation bacon bits. Cover and let stand 10 minutes before serving.
Vegetarian Holiday Dressing
Ingredients
1/3 cup melted butter or margarine
6 slices white bread toasted & cubed
6 slices rye bread toasted & cubed
1/2 cup complete corn muffin mix
1/4 cup water
1 medium onion chopped or grated
1 medium green pepper chopped or grated
1 cup diced celery
1/2 cup raisins
1 tsp poultry seasoning
1/2 tsp oregano
salt/pepper
Mix all ingredients together (adding a little more water if necessary). Place dressing in large zip lock bag. Let dressing pack down in bag into loaf shape. Fold over and close zip lock. microwave 8 minutes on high. Let stand at least 5 minutes in closed bag before serving.
Sauted Yams
Ingredients
2 cans yams
1/4 cup butter (or oil)
salt/pepper
Drain liquid off yams. Put shortening in large Teflon fry pan. On low heat, place yams in pan. Add salt & pepper. Saute 6-7 minutes on each side. Serve.
